Description
A refreshing and nutritious apple quinoa salad.
Ingredients
Scale
- 1 cup quinoa
- 2 cups water
- 1 apple, diced
- 1/2 cup walnuts, chopped
- 1/4 cup dried cranberries
- 1/4 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water.
- In a pot, bring water to a boil.
- Add quinoa and reduce heat to low. Cover and simmer for 15 minutes.
- Remove from heat and let sit for 5 minutes, then fluff with a fork.
- In a large bowl, combine quinoa, apple, walnuts, cranberries, and feta.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour dressing over salad and mix well.
- Serve chilled or at room temperature.

- Substitute any nuts you prefer.
- Use fresh herbs for added flavor.
- Store leftovers in the refrigerator for up to two days.
