Description

A refreshing and nutritious apple quinoa salad.


Ingredients

Scale
  • 1 cup quinoa
  • 2 cups water
  • 1 apple, diced
  • 1/2 cup walnuts, chopped
  • 1/4 cup dried cranberries
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, bring water to a boil.
  3. Add quinoa and reduce heat to low. Cover and simmer for 15 minutes.
  4. Remove from heat and let sit for 5 minutes, then fluff with a fork.
  5. In a large bowl, combine quinoa, apple, walnuts, cranberries, and feta.
  6. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  7. Pour dressing over salad and mix well.
  8. Serve chilled or at room temperature.
