- 2 cups carrots, sliced
- 3 tablespoons olive oil
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 tablespoon sesame seeds
- Salt to taste
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine broccoli and carrots.
- In a separate bowl, mix olive oil, soy sauce, sesame oil, garlic, ginger, and salt.
- Pour the mixture over the vegetables and toss to coat.
- Spread the vegetables on a baking sheet.
- Roast for 20-25 minutes, stirring halfway through.
- Remove from oven and sprinkle with sesame seeds before serving.
