Description
A simple and nutritious dish made with black beans and rice.
Ingredients

- 1 cup black beans
- 2 cups water
- 1 cup rice
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- Salt to taste
- Black pepper to taste
Instructions
- Rinse the black beans and soak them overnight.
- Drain the beans and add them to a pot with water.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- In another pot, heat olive oil over medium heat.
- Add onion and garlic, sauté until soft.
- Add cumin, salt, and pepper, and stir.
- Add rice and stir to coat.
- Add 2 cups of water and bring to a boil.
- Cover and reduce heat to low, simmer for 20 minutes.
- Combine cooked beans and rice, mix well and serve.
Notes
- Use canned black beans for quicker preparation.
- Adjust spices according to your taste.
- Serve with avocado or salsa for extra flavor.
