A delicious and filling breakfast option wrapped in a tortilla.
Ingredients

- 4 large flour tortillas
- 6 eggs
- 1 cup cooked breakfast sausage, crumbled
- 1 cup shredded cheese
- 1/2 cup diced bell peppers
- 1/4 cup chopped onions
- Salt and pepper to taste
Instructions
- In a skillet, sauté bell peppers and onions until soft.
- In a bowl, whisk eggs and season with salt and pepper.
- Pour eggs into the skillet and scramble until cooked through.
- Add sausage and mix well.
- Warm tortillas in a separate skillet.
- Place egg mixture in the center of each tortilla.
- Sprinkle cheese on top of the egg mixture.
- Roll up tortillas, folding in the sides to secure the filling.
- Serve warm.

- Feel free to customize with your favorite vegetables.
- These can be made ahead and frozen for quick breakfasts.
- Serve with salsa or hot sauce for extra flavor.
