Description
Chicken Khao Soi is a rich and flavorful Thai curry noodle soup.
Ingredients

- 2 chicken thighs, bone-in and skin-on
- 1 tablespoon vegetable oil
- 2 tablespoons yellow curry paste
- 4 cups chicken broth
- 1 can coconut milk
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- 2 teaspoons sugar
- 8 ounces egg noodles
- Fresh cilantro, for garnish
- Lime wedges, for serving
- Sliced red onion, for garnish
- Chili oil, for serving
Instructions
- Heat the oil in a pot over medium heat.
- Add the chicken thighs and cook until browned.
- Stir in the curry paste and cook for 1 minute.
- Add the chicken broth and bring to a boil.
- Reduce heat and simmer for 25 minutes.
- Remove the chicken, shred it, and return it to the pot.
- Stir in coconut milk, soy sauce, fish sauce, and sugar.
- Cook the egg noodles according to package instructions.
- Divide noodles into bowls and ladle the soup over them.
- Garnish with cilantro, red onion, and serve with lime wedges and chili oil.
Notes
- You can use chicken fillet if preferred.
- Adjust spice level by adding more or less curry paste.
- Store leftovers in the refrigerator for up to 3 days.
