Description

Chicken Khao Soi is a rich and flavorful Thai curry noodle soup.


Ingredients

Scale
  • 2 chicken thighs, bone-in and skin-on
  • 1 tablespoon vegetable oil
  • 2 tablespoons yellow curry paste
  • 4 cups chicken broth
  • 1 can coconut milk
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 2 teaspoons sugar
  • 8 ounces egg noodles
  • Fresh cilantro, for garnish
  • Lime wedges, for serving
  • Sliced red onion, for garnish
  • Chili oil, for serving

Instructions

  1. Heat the oil in a pot over medium heat.
  2. Add the chicken thighs and cook until browned.
  3. Stir in the curry paste and cook for 1 minute.
  4. Add the chicken broth and bring to a boil.
  5. Reduce heat and simmer for 25 minutes.
  6. Remove the chicken, shred it, and return it to the pot.
  7. Stir in coconut milk, soy sauce, fish sauce, and sugar.
  8. Cook the egg noodles according to package instructions.
  9. Divide noodles into bowls and ladle the soup over them.
  10. Garnish with cilantro, red onion, and serve with lime wedges and chili oil.

Notes

  • You can use chicken fillet if preferred.
  • Adjust spice level by adding more or less curry paste.
  • Store leftovers in the refrigerator for up to 3 days.
