Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 6 cups chicken broth
  • 1 cup orzo pasta
  • 2 cups cooked chicken, shredded
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 cups spinach, chopped
  • Juice of 1 lemon

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook until softened.
  3. Stir in garlic and cook for 1 minute.
  4. Add chicken broth and bring to a boil.
  5. Stir in orzo and reduce heat to a simmer.
  6. Add chicken, oregano, salt, and pepper. Cook for 10 minutes.
  7. Add spinach and lemon juice. Cook for an additional 2 minutes.
  8. Serve hot.

Notes
