A comforting and hearty chicken orzo soup perfect for any season.
Ingredients

- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 6 cups chicken broth
- 1 cup orzo pasta
- 2 cups cooked chicken, shredded
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 cups spinach, chopped
- Juice of 1 lemon
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook until softened.
- Stir in garlic and cook for 1 minute.
- Add chicken broth and bring to a boil.
- Stir in orzo and reduce heat to a simmer.
- Add chicken, oregano, salt, and pepper. Cook for 10 minutes.
- Add spinach and lemon juice. Cook for an additional 2 minutes.
- Serve hot.
Notes
- Store leftovers in an airtight container in the refrigerator.
- Reheat on the stove or in the microwave.
- Feel free to add other vegetables.
