Description
A creamy and rich crab bisque that highlights the flavors of fresh crab.
Ingredients

- 1 lb fresh crab meat
- 4 cups seafood stock
- 1 cup heavy cream
- 1/2 cup dry white wine
- 1/4 cup butter
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1/4 cup all-purpose flour
- 1 tsp Old Bay seasoning
- Salt and pepper to taste
Instructions
- Melt butter in a large pot over medium heat.
- Add onion and garlic, sauté until translucent.
- Stir in flour, cook for 2 minutes.
- Slowly add white wine, stirring constantly.
- Pour in seafood stock, bring to a simmer.
- Add crab meat and Old Bay seasoning, cook for 10 minutes.
- Stir in heavy cream, heat through but do not boil.
- Season with salt and pepper before serving.
Notes
- Use fresh crab for the best flavor.
- Adjust seasoning to your preference.
- Garnish with fresh parsley or chives if desired.
