Ingredients

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped parsley
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp oregano
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp mustard

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, combine ground beef, breadcrumbs, parsley, egg, garlic, oregano, salt, and pepper.
  3. Form mixture into meatballs and place on a baking sheet.
  4. Bake for 20 minutes or until cooked through.
  5. While meatballs are baking, prepare the salad by mixing tomatoes, cucumber, and red onion in a bowl.
  6. In a separate bowl, whisk together olive oil, red wine vinegar, and mustard for the dressing.
  7. Once meatballs are done, assemble the bowl with salad, meatballs, and top with feta cheese.
  8. Drizzle dressing over the bowl and serve.
