Ingredients

- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup chopped parsley
- 1 egg
- 2 cloves garlic, minced
- 1 tsp oregano
- 1 tsp salt
- 1/2 tsp pepper
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 1 tsp mustard
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, combine ground beef, breadcrumbs, parsley, egg, garlic, oregano, salt, and pepper.
- Form mixture into meatballs and place on a baking sheet.
- Bake for 20 minutes or until cooked through.
- While meatballs are baking, prepare the salad by mixing tomatoes, cucumber, and red onion in a bowl.
- In a separate bowl, whisk together olive oil, red wine vinegar, and mustard for the dressing.
- Once meatballs are done, assemble the bowl with salad, meatballs, and top with feta cheese.
- Drizzle dressing over the bowl and serve.

- Use lean ground beef for a healthier option.
- Substitute with ground turkey for a lighter meal.
- Add olives for an extra burst of flavor.
