Ingredients

- 2 medium zucchinis, sliced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
- 1/4 cup fresh basil, chopped
Instructions
- Preheat the grill to medium heat.
- Brush the zucchini slices with olive oil and season with salt and pepper.
- Grill the zucchini for about 3-4 minutes on each side until tender.
- In a large bowl, combine grilled zucchini, cherry tomatoes, and red onion.
- In a small bowl, whisk together olive oil and balsamic vinegar.
- Pour the dressing over the salad and toss gently.
- Add fresh basil and mix well before serving.
Notes
- Feel free to add other vegetables like bell peppers or corn.
- This salad can be served warm or cold.
