Ingredients

  • 2 cups vegetable broth
  • 1 cup canned chickpeas, drained and rinsed
  • 1 cup diced carrots
  • 1 cup chopped spinach
  • 1 cup diced tomatoes
  • 1 cup diced bell peppers
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Add carrots and bell peppers, cook for 5 minutes.
  4. Stir in diced tomatoes and chickpeas.
  5. Add vegetable broth, cumin, salt, and pepper.
  6. Bring to a boil, then reduce heat and simmer for 20 minutes.
  7. Add spinach and cook for an additional 5 minutes.
  8. Serve hot.
