A refreshing Italian chickpea salad packed with flavor.
Ingredients

- 1 can chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 red onion, finely chopped
- 1/4 cup parsley, chopped
- 1/4 cup feta cheese, crumbled
- 3 tablespoons olive oil
- 2 tablespoons red wine vinegar
- Salt and pepper to taste
Instructions
- In a large bowl, combine chickpeas, cherry tomatoes, cucumber, red onion, and parsley.
- Add feta cheese.
- In a small bowl, whisk together olive oil, red wine vinegar, salt, and pepper.
- Pour dressing over the salad.
- Toss gently to combine.
- Chill for 30 minutes before serving.
Notes
- Feel free to add other vegetables like bell peppers or olives.
- This salad can be made a day ahead.
- Store leftovers in the refrigerator for up to 3 days.
