Description

Ingredients

  • 1 cup basmati rice
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 lemon, juiced and zested
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse the basmati rice under cold water until the water runs clear.
  2. In a pot, heat olive oil over medium heat.
  3. Add mustard seeds and cumin seeds; cook until they start to pop.
  4. Add chopped onion and garlic; sauté until onion is translucent.
  5. Add rinsed rice and stir to coat with oil and spices.
  6. Add vegetable broth, lemon juice, lemon zest, and salt.
  7. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
  8. Remove from heat and let it sit covered for 5 minutes.
  9. Fluff the rice with a fork and garnish with fresh cilantro before serving.
