- 1 cup basmati rice
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 lemon, juiced and zested
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Rinse the basmati rice under cold water until the water runs clear.
- In a pot, heat olive oil over medium heat.
- Add mustard seeds and cumin seeds; cook until they start to pop.
- Add chopped onion and garlic; sauté until onion is translucent.
- Add rinsed rice and stir to coat with oil and spices.
- Add vegetable broth, lemon juice, lemon zest, and salt.
- Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
- Remove from heat and let it sit covered for 5 minutes.
- Fluff the rice with a fork and garnish with fresh cilantro before serving.
Notes
- Adjust lemon juice for desired tartness.
- Can add vegetables like peas or carrots for extra nutrition.
