A delicious low-carb dish featuring chicken cooked in a creamy Tuscan sauce.
Ingredients

- 4 boneless, skinless chicken fillet
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Season chicken fillet with salt and pepper.
- Add chicken to the skillet and cook until browned on both sides.
- Remove chicken and set aside.
- In the same skillet, add garlic and cook until fragrant.
- Add cherry tomatoes and spinach, cooking until spinach wilts.
- Pour in heavy cream and stir in Parmesan cheese and Italian seasoning.
- Return chicken to the skillet and simmer until cooked through.
- Serve hot.
