- 2 chicken fillet
- 1/4 cup maple syrup
- 2 tablespoons Dijon mustard
- 1 tablespoon olive oil
- 1 cup cooked quinoa
- 1 cup steamed broccoli
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix maple syrup and Dijon mustard.
- Coat chicken fillet with olive oil, salt, and pepper.
- Place chicken in a baking dish and pour the maple Dijon mixture over it.
- Bake for 25-30 minutes until chicken is cooked through.
- While the chicken bakes, prepare quinoa and steam broccoli.
- Once cooked, slice the chicken and serve over quinoa with broccoli on the side.
Notes
- Adjust maple syrup for sweetness preference.
- Use brown rice or bulgur instead of quinoa if desired.
- Leftovers can be stored in the fridge for up to 3 days.
