Ingredients

- 1 cup long-grain rice
- 2 cups vegetable broth
- 1 cup diced tomatoes
- 1/2 cup chopped bell peppers
- 1/2 cup sliced olives
- 1/4 cup chopped parsley
- 1 teaspoon dried oregano
- 2 tablespoons olive oil
- Salt to taste
Instructions
- Heat olive oil in a pot over medium heat.
- Add bell peppers and sauté for 3 minutes.
- Stir in rice and cook for 2 minutes.
- Add broth, tomatoes, olives, oregano, and salt.
- Bring to a boil, then reduce heat to low.
- Cover and simmer for 15-20 minutes until rice is cooked.
- Remove from heat and fluff with a fork.
- Garnish with parsley before serving.
