- 4 medium potatoes, diced
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1/4 cup chopped cilantro
Instructions
- Preheat the oven to 425°F (220°C).
- In a bowl, combine diced potatoes, olive oil, chili powder, cumin, garlic powder, salt, and pepper.
- Toss until potatoes are evenly coated.
- Spread the potatoes on a baking sheet in a single layer.
- Bake for 25-30 minutes or until golden and crispy.
- Remove from the oven and sprinkle with chopped cilantro.
