Description
A hearty minestrone soup with sausage and pesto for added flavor.
Ingredients

- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 1 pound Italian sausage, casings removed
- 6 cups chicken broth
- 1 can (14.5 ounces) diced tomatoes
- 1 cup green beans, trimmed and cut
- 1 cup zucchini, diced
- 1 cup pasta (small shapes)
- 1 cup fresh spinach
- 1/2 cup pesto
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Sauté until soft.
- Add garlic and sausage. Cook until browned.
- Pour in chicken broth and diced tomatoes. Bring to a boil.
- Add green beans and zucchini. Simmer for 10 minutes.
- Add pasta and cook until al dente.
- Stir in spinach and pesto. Season with salt and pepper.
- Serve hot.

- This soup freezes well.
- Use any small pasta you prefer.
- Adjust the sausage quantity based on taste.
