Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1 pound Italian sausage, casings removed
  • 6 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup green beans, trimmed and cut
  • 1 cup zucchini, diced
  • 1 cup pasta (small shapes)
  • 1 cup fresh spinach
  • 1/2 cup pesto
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Sauté until soft.
  3. Add garlic and sausage. Cook until browned.
  4. Pour in chicken broth and diced tomatoes. Bring to a boil.
  5. Add green beans and zucchini. Simmer for 10 minutes.
  6. Add pasta and cook until al dente.
  7. Stir in spinach and pesto. Season with salt and pepper.
  8. Serve hot.
