Ingredients

- 4 cups vegetable broth
- 2 tablespoons miso paste
- 1 tablespoon fresh ginger, grated
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 cup mushrooms, sliced
- 1 cup spinach
- 1 green onion, chopped
Instructions
- In a pot, bring vegetable broth to a simmer.
- Add miso paste and stir until dissolved.
- Stir in ginger, garlic, and soy sauce.
- Add mushrooms and cook for 5 minutes.
- Mix in spinach and green onion.
- Simmer for another 2-3 minutes.
- Serve hot.
