Description

A fresh and flavorful orzo salad with asparagus and feta cheese.


Ingredients

  • 1 cup orzo pasta
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 1 cup cherry tomatoes, halved
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Cook the orzo pasta according to package instructions. Drain and set aside.
  2. In a pot, bring water to a boil and blanch the asparagus for 2-3 minutes. Drain and rinse under cold water.
  3. In a large bowl, combine the cooked orzo, blanched asparagus, cherry tomatoes, and feta cheese.
  4. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  5. Pour the dressing over the salad and toss gently to combine.
  6. Garnish with fresh parsley before serving.
