A fresh and hearty chopped salad inspired by Portillo’s recipe.
Ingredients

- 1 head of romaine lettuce, chopped
- 1 cup of cooked chicken fillet, diced
- 1 cup of cherry tomatoes, halved
- 1/2 cup of red onion, finely chopped
- 1/2 cup of cucumber, diced
- 1/2 cup of bacon bits
- 1/4 cup of blue cheese, crumbled
- 1/4 cup of Italian dressing
Instructions
- Chop the romaine lettuce and place it in a large bowl.
- Add the diced chicken, cherry tomatoes, red onion, and cucumber.
- Sprinkle the bacon bits and blue cheese on top.
- Drizzle the Italian dressing over the salad.
- Toss the salad until all ingredients are well combined.
- Serve immediately or refrigerate until ready to serve.
Notes
- For a vegetarian option, omit the chicken and bacon.
- You can add other vegetables like bell peppers or carrots.
- This salad is best served fresh, but can be stored in the refrigerator for up to two days.
