Ingredients

- 2 cups potatoes, diced
- 1 cup green beans, trimmed
- 1/2 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt to taste
- Pepper to taste
Instructions
- Boil the diced potatoes until tender, about 10-12 minutes.
- Add the green beans to the boiling water for the last 3-4 minutes.
- Drain the potatoes and green beans and let them cool.
- In a bowl, mix olive oil, lemon juice, salt, and pepper.
- Add the cooled potatoes, green beans, and feta cheese to the bowl.
- Toss gently to combine all ingredients.
- Serve immediately or chill before serving.
