Description
A refreshing and crunchy radish salad.
Ingredients

- 2 cups radishes, thinly sliced
- 1 cup cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Wash and slice the radishes.
- Dice the cucumber and slice the red onion.
- Chop the fresh parsley.
- In a bowl, combine the radishes, cucumber, red onion, and parsley.
- In a small bowl, whisk together olive oil and lemon juice.
- Pour the dressing over the salad and toss to coat.
- Season with salt and pepper to taste.
- Serve immediately.
Notes
- This salad is best served fresh.
- You can add other vegetables like bell peppers or carrots.
- Adjust dressing to your taste.
