Description
A colorful and refreshing salad made with orzo and fresh vegetables.
Ingredients

- 1 cup orzo
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 cup bell peppers, diced
- 1/2 cup red onion, diced
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Cook orzo according to package instructions.
- Drain and rinse under cold water.
- In a large bowl, combine orzo, cherry tomatoes, cucumber, bell peppers, red onion, and parsley.
- In a separate bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour dressing over salad and toss to combine.
- Refrigerate for at least 30 minutes before serving.
