Description
A hearty and flavorful Serbian bean soup made with beans, vegetables, and spices.
Ingredients

- 2 cups dried white beans
- 1 onion, chopped
- 2 carrots, diced
- 1 bell pepper, diced
- 3 cloves garlic, minced
- 2 tomatoes, chopped
- 2 tablespoons vegetable oil
- 1 teaspoon paprika
- 1 teaspoon black pepper
- Salt to taste
- 6 cups vegetable broth
- Fresh parsley for garnish
Instructions
- Soak the beans overnight in water.
- Drain and rinse the beans.
- In a large pot, heat the vegetable oil over medium heat.
- Add the onion, carrots, and bell pepper. Sauté until softened.
- Add the garlic and cook for another minute.
- Stir in the tomatoes, paprika, black pepper, and salt.
- Add the soaked beans and vegetable broth.
- Bring to a boil, then reduce heat and simmer for about 1 hour or until beans are tender.
- Adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley.
Notes
- Use canned beans for a quicker version.
- Feel free to add smoked meat for extra flavor.
- Store leftovers in the refrigerator for up to 3 days.
