- 4 boneless chicken fillet
- 1 cup roasted red peppers, chopped
- 1 cup mozzarella cheese, shredded
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Flatten the chicken fillet using a meat mallet.
- In a bowl, mix roasted red peppers and mozzarella cheese.
- Stuff each chicken fillet with the mixture.
- Secure the openings with toothpicks.
- Season the chicken with olive oil, garlic powder, Italian seasoning, salt, and pepper.
- Place the chicken in a baking dish.
- Bake for 25-30 minutes or until the chicken is cooked through.

- Serve with a side salad or vegetables.
