A nutritious and colorful salad packed with sweet potatoes and quinoa.
Ingredients

- 1 cup quinoa
- 2 cups water
- 2 medium sweet potatoes, diced
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 bell pepper, chopped
- 1/4 cup red onion, diced
- 1/4 cup cilantro, chopped
- 1 lime, juiced
Instructions
- Preheat the oven to 400°F (200°C).
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and water. Bring to a boil, then reduce heat and simmer for 15 minutes.
- Meanwhile, toss sweet potatoes with olive oil, salt, and pepper. Spread on a baking sheet.
- Roast sweet potatoes for 25-30 minutes until tender.
- In a large bowl, combine cooked quinoa, roasted sweet potatoes, bell pepper, red onion, and cilantro.
- Drizzle with lime juice and mix well.
- Serve warm or chilled.
Notes
- Store leftovers in an airtight container in the fridge.
- Can add feta cheese for extra flavor.
- Great as a side dish or main course.
