Ingredients

- 2 large sweet potatoes, peeled and diced
- 1 pound sausage, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 can diced tomatoes
- 2 cups kale, chopped
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- In a large pot, brown the sausage over medium heat.
- Add onion and garlic; cook until softened.
- Add sweet potatoes, broth, and diced tomatoes.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Stir in kale and thyme; cook for an additional 5 minutes.
- Season with salt and pepper before serving.
