- 8 oz rotini pasta
- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup cherry tomatoes, halved
- 1 cup corn, drained
- 1 cup black beans, rinsed
- 1 cup bell pepper, diced
- 1 cup shredded cheese
- 1/2 cup ranch dressing
- 1/4 cup fresh cilantro, chopped
Instructions
- Cook the rotini pasta according to package instructions. Drain and set aside.
- In a skillet, cook the ground beef over medium heat until browned.
- Add taco seasoning to the beef and mix well.
- In a large bowl, combine cooked pasta, seasoned beef, cherry tomatoes, corn, black beans, bell pepper, and cheese.
- Pour ranch dressing over the salad and toss to combine.
- Garnish with fresh cilantro before serving.
Notes
- For a vegetarian option, replace ground beef with tofu or lentils.
- Adjust the taco seasoning to taste.
