Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup cherry tomatoes, halved
  • 1 cup corn, drained
  • 1 cup black beans, rinsed
  • 1 cup bell pepper, diced
  • 1 cup shredded cheese
  • 1/2 cup ranch dressing
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Cook the rotini pasta according to package instructions. Drain and set aside.
  2. In a skillet, cook the ground beef over medium heat until browned.
  3. Add taco seasoning to the beef and mix well.
  4. In a large bowl, combine cooked pasta, seasoned beef, cherry tomatoes, corn, black beans, bell pepper, and cheese.
  5. Pour ranch dressing over the salad and toss to combine.
