Description

A fusion dish combining the flavors of tacos and pierogi in a hearty casserole.


Ingredients

  • 1 package of pierogi (16 oz)
  • 1 lb ground beef
  • 1 taco seasoning packet
  • 1 cup salsa
  • 2 cups shredded cheese
  • 1 can black beans (15 oz), drained and rinsed
  • 1 cup corn (frozen or canned)
  • 2 green onions, chopped

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the ground beef in a skillet over medium heat until browned.
  3. Add taco seasoning and salsa to the beef, stirring to combine.
  4. In a baking dish, layer half of the pierogi at the bottom.
  5. Spread half of the beef mixture over the pierogi.
  6. Add half of the black beans and corn.
  7. Sprinkle half of the cheese on top.
  8. Repeat the layers with the remaining pierogi, beef mixture, black beans, corn, and cheese.
  9. Bake in the oven for 30 minutes or until the cheese is melted and bubbly.
  10. Garnish with chopped green onions before serving.

Notes

  • Use any flavor of pierogi you prefer.
  • Feel free to add more vegetables, like bell peppers.
  • For a spicier version, add jalapeños to the beef mixture.
