A fusion dish combining the flavors of tacos and pierogi in a hearty casserole.
Ingredients

- 1 package of pierogi (16 oz)
- 1 lb ground beef
- 1 taco seasoning packet
- 1 cup salsa
- 2 cups shredded cheese
- 1 can black beans (15 oz), drained and rinsed
- 1 cup corn (frozen or canned)
- 2 green onions, chopped
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the ground beef in a skillet over medium heat until browned.
- Add taco seasoning and salsa to the beef, stirring to combine.
- In a baking dish, layer half of the pierogi at the bottom.
- Spread half of the beef mixture over the pierogi.
- Add half of the black beans and corn.
- Sprinkle half of the cheese on top.
- Repeat the layers with the remaining pierogi, beef mixture, black beans, corn, and cheese.
- Bake in the oven for 30 minutes or until the cheese is melted and bubbly.
- Garnish with chopped green onions before serving.
Notes
- Use any flavor of pierogi you prefer.
- Feel free to add more vegetables, like bell peppers.
- For a spicier version, add jalapeños to the beef mixture.
