Ingredients

- 3 cups cooked jasmine rice
- 2 tablespoons vegetable oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 cup mixed vegetables (peas, carrots, corn)
- 2 tablespoons red curry paste
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- 2 eggs, beaten
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions
- Heat oil in a large pan over medium heat.
- Add onion and garlic, sauté until soft.
- Stir in bell pepper and mixed vegetables, cook for 3 minutes.
- Add curry paste, stir until fragrant.
- Add cooked rice, soy sauce, and fish sauce. Mix well.
- Push rice to one side, pour in beaten eggs. Scramble until cooked.
- Combine eggs with rice, mix thoroughly.
- Serve hot, garnished with cilantro and lime wedges.
Notes
- Use leftover rice for best results.
- Adjust curry paste for desired spiciness.
- Vegetables can be varied based on preference.
