- 200g ramen noodles
- 300g chicken fillet, sliced
- 1 cup broccoli florets
- 1 red bell pepper, sliced
- 1 carrot, julienned
- 1/2 cup peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon lime juice
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, minced
- 2 tablespoons sesame oil
- Chopped peanuts for garnish
- Fresh cilantro for garnish
Instructions
- Cook ramen noodles according to package instructions. Drain and set aside.
- In a pan, heat sesame oil over medium heat.
- Add sliced chicken and cook until browned and cooked through.
- Add broccoli, bell pepper, and carrot. Stir-fry for 3-4 minutes.
- In a bowl, mix peanut butter, soy sauce, honey, lime juice, garlic, and ginger.
- Pour sauce over chicken and vegetables. Stir to combine.
- Add cooked ramen to the pan and toss to coat.
- Serve hot, garnished with chopped peanuts and cilantro.
Notes
- This dish can be made vegetarian by substituting chicken with tofu.
- Adjust the spiciness by adding chili flakes if desired.
- Store leftovers in an airtight container in the fridge for up to 3 days.
