A flavorful Thai yellow chicken curry with rich spices.
Ingredients

- 2 lbs chicken, cut into pieces
- 2 tablespoons yellow curry paste
- 1 can (400 ml) coconut milk
- 1 cup chicken broth
- 2 potatoes, diced
- 1 onion, chopped
- 2 carrots, sliced
- 2 tablespoons fish sauce
- 1 tablespoon sugar
- Fresh basil for garnish
Instructions
- Heat oil in a pot over medium heat.
- Add onions and sauté until soft.
- Stir in yellow curry paste and cook for 2 minutes.
- Add chicken pieces and cook until browned.
- Pour in coconut milk and chicken broth.
- Add potatoes and carrots.
- Stir in fish sauce and sugar.
- Simmer for 30 minutes until chicken is cooked.
- Garnish with fresh basil before serving.
Notes
- Serve with jasmine rice.
- Adjust spice level to taste.
- Can add other vegetables like bell peppers.
