Description

A flavorful Thai yellow chicken curry with rich spices.


Ingredients

  • 2 lbs chicken, cut into pieces
  • 2 tablespoons yellow curry paste
  • 1 can (400 ml) coconut milk
  • 1 cup chicken broth
  • 2 potatoes, diced
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 tablespoons fish sauce
  • 1 tablespoon sugar
  • Fresh basil for garnish

Instructions

  1. Heat oil in a pot over medium heat.
  2. Add onions and sauté until soft.
  3. Stir in yellow curry paste and cook for 2 minutes.
  4. Add chicken pieces and cook until browned.
  5. Pour in coconut milk and chicken broth.
  6. Add potatoes and carrots.
  7. Stir in fish sauce and sugar.
  8. Simmer for 30 minutes until chicken is cooked.
  9. Garnish with fresh basil before serving.

Notes

  • Serve with jasmine rice.
  • Adjust spice level to taste.
  • Can add other vegetables like bell peppers.
