Description

Three Bean Salad is a refreshing and nutritious dish made with a mix of beans and vegetables.


Ingredients

  • 1 cup green beans, trimmed
  • 1 cup kidney beans, canned and rinsed
  • 1 cup chickpeas, canned and rinsed
  • 1/2 cup red onion, diced
  • 1/2 cup bell pepper, diced
  • 1/4 cup olive oil
  • 1/4 cup apple cider vinegar
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Cook green beans in boiling water for 3 minutes. Drain and cool.
  2. In a large bowl, combine kidney beans, chickpeas, red onion, and bell pepper.
  3. Add cooled green beans to the bowl.
  4. In a separate bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, salt, and pepper.
  5. Pour the dressing over the bean mixture and toss to coat.
  6. Refrigerate for at least 30 minutes before serving.
