Three Bean Salad is a refreshing and nutritious dish made with a mix of beans and vegetables.
Ingredients

- 1 cup green beans, trimmed
- 1 cup kidney beans, canned and rinsed
- 1 cup chickpeas, canned and rinsed
- 1/2 cup red onion, diced
- 1/2 cup bell pepper, diced
- 1/4 cup olive oil
- 1/4 cup apple cider vinegar
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
Instructions
- Cook green beans in boiling water for 3 minutes. Drain and cool.
- In a large bowl, combine kidney beans, chickpeas, red onion, and bell pepper.
- Add cooled green beans to the bowl.
- In a separate bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, salt, and pepper.
- Pour the dressing over the bean mixture and toss to coat.
- Refrigerate for at least 30 minutes before serving.
Notes
- This salad can be made a day in advance.
- Feel free to add other vegetables like corn or tomatoes.
- Adjust dressing ingredients to taste.
