Description

A classic French dessert featuring a creamy vanilla custard topped with a layer of hard caramel.


Ingredients

  • 2 cups heavy cream
  • 1 vanilla bean, split and scraped
  • 5 large egg yolks
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • Pinch of salt

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a saucepan, heat the heavy cream and vanilla bean over medium heat until it begins to simmer.
  3. In a bowl, whisk together the egg yolks, granulated sugar, and salt.
  4. Slowly pour the hot cream into the egg mixture, whisking constantly.
  5. Strain the mixture through a fine sieve into a measuring cup.
  6. Pour the custard into ramekins.
  7. Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
  8. Bake for 30-40 minutes or until set but still slightly jiggly in the center.
  9. Remove from the oven and cool to room temperature before refrigerating for at least 2 hours.
  10. Before serving, sprinkle brown sugar on top of each custard and caramelize using a kitchen torch.

Notes

  • Use fresh vanilla beans for the best flavor.
  • Make sure to cool the custards completely before caramelizing the top.
  • Customize with different flavors by adding citrus zest or other extracts.
