A classic French dessert featuring a creamy vanilla custard topped with a layer of hard caramel.

- 2 cups heavy cream
- 1 vanilla bean, split and scraped
- 5 large egg yolks
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- Pinch of salt
Instructions
- Preheat your oven to 325°F (163°C).
- In a saucepan, heat the heavy cream and vanilla bean over medium heat until it begins to simmer.
- In a bowl, whisk together the egg yolks, granulated sugar, and salt.
- Slowly pour the hot cream into the egg mixture, whisking constantly.
- Strain the mixture through a fine sieve into a measuring cup.
- Pour the custard into ramekins.
- Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
- Bake for 30-40 minutes or until set but still slightly jiggly in the center.
- Remove from the oven and cool to room temperature before refrigerating for at least 2 hours.
- Before serving, sprinkle brown sugar on top of each custard and caramelize using a kitchen torch.
Notes
- Use fresh vanilla beans for the best flavor.
- Make sure to cool the custards completely before caramelizing the top.
- Customize with different flavors by adding citrus zest or other extracts.
